Instructions
  1. Heat oil in soup pot and saute onions till they turn brown.
  2. Add chicken/beef/turkey and brown.
  3. Drain the fat off the onions and chicken/beef/turkey, add taco seasoning, tomatoes, rotel, carrots, water, salt and pepper to taste. Reduce heat and simmer for 35 minutes.
  4. Add corn and beans. Bring to boil, uncovered and simmer for 15 minutes and serve.
